These easy-to-make, healthy treats are dairy and wheat free, and don’t contain any refined sugar.  The oats provide slow release energy and can also be made into larger cookies or bars.

Ingredients

1 cup quick cooking oats

½ cup coconut chips

½ large banana

1 tbsp coconut oil

3 tbsp soy milk or water

½ tsp cinnamon

6 dates

¼ cup sultanas

Method

Preheat oven to 180℃ and line a tray with baking paper. In a medium sized bowl, mix oats, coconut chips, cinnamon, sultanas and roughly chopped dates.

In a small bowl, mash together banana, soy milk and coconut oil. Add wet ingredients to dry and mix well. Roll into tablespoon-sized balls, place on tray and flatten slightly with a fork.

Bake for 15min until golden on outside and firm to touch.

Remove from oven and transfer to wire rack to cool. Store in airtight container in the fridge.
