One-pot Thai green curry

A lightweight and filling soya protein meal that can be cooked in just one pot.

Making flavourful backcountry meals can be so easy. Just take the amount of flavouring you need (curry paste, spices, herbs etc), and pack it in a reusable container that can then be used to hold rubbish once you’ve cooked the meal.

Soya protein is a fantastic backcountry ingredient. However, it does need to be pre-soaked before cooking. In cold water it takes about 20min and in hot water 5min. So make a cup of tea, chuck the soya protein in the leftover hot water while you’re taking in the view, then start cooking once your tea’s finished.

Ingredients

  • ½ cup white rice (cooks faster than brown)
  • 1½ cups water
  • 1 tsp Thai green curry paste
  • ½ tsp garlic powder
  • ½ cup soya protein
  • ½ capsicum
  • Handful of fresh greens

Method

Rehydrate soya chunks. Once they’re spongy, remove from the pot and top up water, if needed, to make 1½ cups.

Bring water to the boil. Add rice (washed if possible), garlic powder, curry paste and chopped capsicum.

Cook with the lid on for 10min or so, stirring occasionally and adding more water if needed. Add greens and the soya chunks just before the rice is cooked.
