Fried banana splits with coconut caramel

A magnificent way to end the day with a delicious sweet treat that not only tastes great but provides the body with potassium, B6 and vitamin C.

Serves: Two

Ingredients

  • 2 bananas
  • 1 tbsp coconut oil
  • 1/4 cup diced almonds
  • 1/4 cup coconut sugar
  • 1/3 cup water
  • 2 tbsp coconut milk powder
  • 2 tbsp slivered almonds
  • Pinch of salt
  • Coconut yoghurt to serve (optional)

Method
Bring coconut sugar and water to boil and simmer for two minutes. Add salt and milk powder and simmer for a further 5-10 minutes, stirring regularly until thick. Stir in salt and set aside.

Leaving bananas in their skin, slice in half lengthways. Heat coconut oil and place bananas cut side down in pan, fry for five minutes until bananas are softened and golden. Place on plate and drizzle with caramel and almonds and top with a dollop of coconut yoghurt.
