The perfect tramping snack to satisfy a sweet tooth. Maddy Bellcroft

This sweet treat packs a punch without the guilt of a chocolate bar. 

What’s better after a hard day’s walk than to sit with your feet up, a hot cup of tea and one of these granola bars to dunk? You can experiment with adding dried fruit or nuts to the mix for different flavour combinations.

Recipe

  • 2 cups rolled oats
  • 1 cup sunflower seeds
  • ½ cup pumpkin seeds
  • ¼ cup chia seeds
  • 2 tbsp hemp seeds
  • 3 tbsp finely sliced crystallised ginger
  • ½ tsp ground ginger
  • ½ cup chocolate chips
  • ⅓ cup honey
  • ¼ cup tahini (or nut butter of choice)

Method

Preheat the oven to 180℃. Place the oats, sunflower and pumpkin seeds on a tray and put in the oven for 5min until lightly toasted.

Remove from the oven and pour into a large bowl. Add chocolate chips, chia, hemp seeds, crystallised and ground ginger, and stir.

Place honey and tahini in a small pot and warm on the stove, stirring regularly until just bubbling. Pour this mixture into the oat mixture and stir until well combined. Press into a lined tin so that it is about 1cm thick. Bake for 8-10min, until crunchy and golden.

Remove from oven and allow to cool fully before slicing with a sharp knife into rectangles.

Store in an airtight container.
