One-pot backcountry tuna bolognese

A filling meal that’s light on the wallet and in the pack. By Sabrina McCormack

This is a quick outdoor meal for the whole family that can be easily adapted to your preferences. For a lightweight version, replace tomato paste with two sachets of Cup-a-Soup (tomato flavour) and use dried onions and garlic. This recipe also works with half the amount of tomato paste, or double the tuna. Add cheese to make it more filling.

Ingredients

  • 2 cloves of finely chopped garlic
  • 1 small, finely chopped onion
  • 1 can of tuna in olive oil (185g)
  • 200g tomato paste
  • 1 tbsp mixed herbs
  • 300g pasta

Method

Cook the pasta until almost al dente.

Drain the water from the pot, leaving just enough to get a thick sauce out of the tomato paste.

Add the tomato paste and stir. Once the sauce is smooth, add the tuna, olive oil, garlic and onion. Season to taste with mixed herbs. Simmer for another 1–2 minutes to warm all ingredients.
