Miso Soba Noodle Soup

Rehydrate, replace lost salts and fill your stomach with this one-pot soup. 

This soup is terrific at the end of a day’s tramping because it’s a sneaky hydrator, the miso helps replace lost salt, and the noodles are quick and easy to cook. 

Pre-mix the miso flavouring and carry it in a reusable container.

Ingredients

Handful of dried soya chunks

1 bundle soba noodles (about 1.5cm across)

1 tsp miso paste mixed with sesame oil and a sprinkle of chili flakes 

A few slices of fresh ginger chopped finely

Half a carrot sliced thinly lengthways

Half a capsicum sliced thinly lengthways

Handful of chopped spring onion

Method

Bring a full pot of water to the boil then remove from heat. Drop soya chunks in and allow to stand for five minutes. Remove from water and set aside.

Bring the water back to the boil, add the noodles and cook for about five minutes. 

When they’re almost cooked, stir in the pre-mixed miso flavouring, ginger, carrot, capsicum and drained soya chunks. 

Remove the pot from the heat, cover with a lid and allow it to sit for a while (if you can wait!)

Garnish with spring onion and enjoy a filling, hydrating and tasty meal.
