Coconut cacao breakfast oats

Desiccated coconut is a good alternative to milk powder and, when combined with oats and seeds, makes a tasty, sweet and filling breakfast.

If you’ve run out of milk powder, or want a taste change, why not plan ahead and soak desiccated coconut in water overnight. Coconut milk can be delicious, especially when combined with oats. If you like your oats sweet, add some dates to the overnight coconut soak. Pre-mix the oats with seeds and cacao powder before leaving home to save time.

Ingredients

  • ½ cup of desiccated coconut
  • ½ cup oats
  • 1 tsp cacao powder
  • Handful of pumpkin and sunflower seeds and linseed
  • 1 tbsp peanut butter
  • Handful of smashed banana chips (use those leftover bits at the bottom of your scroggin!)

Method

Put the desiccated coconut into a pot with a cup of water, pop a lid on and leave to soak overnight.

In the morning, top the coconut water back up – about another cup – and bring to the boil.

Add the oats, cacao powder and seeds and stir slowly until cooked.

Stir in peanut butter, garnish with banana chips and enjoy.
