Walnut truffles

A decadent treat that uses the natural sweetness of kumara and the goodness of goji berries.

Ingredients
¼ cup goji berries
1 medium sized kumara (400g)
2 tbsp cocoa powder
1 cup ground almonds or sunflower seeds
½ cup walnut pieces
¼ tsp mixed spice
1 tbsp honey (optional)
Pinch of sea salt
1 cup coconut thread

Method
Preheat oven to 180°C. Pierce kumara with a fork then bake in its skin for 30min until completely soft inside. Soak goji berries in a half cup of boiling water for 10min then drain well, pressing out excess moisture.

Scrape kumara flesh into a medium-sized bowl, add goji berries, cocoa powder, walnuts, mixed spice, honey and sea salt and combine well. Mixture should form balls when rolled in hand. If too dry, add a little water and if too sticky, add a little more ground almond.

Roll into teaspoon-sized balls then press lightly into coconut to coat. Store in airtight container in fridge.
