Cocoa date energy balls

These raw bites are quick to create and make great on-the-go snacks or hut treats. They are filled with good fats and loads of energy to keep a spring in your step.

Ingredients

1 cup nuts of choice (almonds, walnuts, Brazil, cashews)

1 cup seeds of choice (sesame, pumpkin, sunflower, chia)

1 cup dates, diced and softened in 1 cup very hot water for 10min

½ cup desiccated coconut + ¾ cup extra for rolling

2tbsp carob or cocoa powder

Method

Place nuts in a food processor and pulse until they are coarsely ground. Drain the dates, reserving the liquid, and add dates along with all other ingredients. Process until everything is well combined, then slowly add the date liquid until mixture forms a soft ball (you may not need all of it). If the mixture becomes too sticky add extra coconut.

Roll into bite-sized balls and dip in extra shredded coconut or cocoa powder.

Store in the fridge or freezer until needed.
